How To Make a Quick, College Style, Post Workout Vegan Meal.

This dish can be made within 30 minutes of your workout and can give you all the nutrients you need to gain and sustain muscle. This meal has potatoes, cinnamon, rice and vegan sausage and can be prepared easily. A college style meal is also has to be very affordable and is made using simple store bought items.


Ingredients

- Cinnamon

- Garlic power/regular minced garlic

- Olive oil

- Cooking Salt

- 2 medium sized/ small/ Red Potatoes

- 1 plant based sausage of your choice (Recommend: Mediterranean flavored)

- 1 packet of ready rice (Recommend: whole wheat brown packet rice)


The only ingredient on this list that can be quite pricy is the vegan sausage, however it can be bought at reasonable prices at your vegan friendly stores. What make this a simple college style meal is the packet rice, it is a simple and quick solution to boiling rice.


Recipe

Step 1: Cut vegan sausage into small equal pieces or links. Place a small amount of olive oil on pan and bring the stovetop to a medium heat.

Step 2: Place vegan sausage on stove top and let simmer until hot (Plant based meats tend to cook faster than regulars meat so be sure to watch and flip regularly)


Step 3: Wash potatoes under cold water and place in a microwave safe bowl. Oil potatoes thoroughly, poke holes through potatoes skin to thoroughly to vent.

Step 4: Season potatoes with cinnamon, garlic powder or minced garlic, and lightly salt.

Step 5: Cover potatoes and place bowl in, and trust me on this, the microwave and set to 8 minutes. Take out of Microwave.

Step 6: Place ready rice in microwave

Step 7: When rice is finished combine with potatoes within the same bowl and add plant based sausage.


The potatoes and rice give you the potassium you need for healthy blood flow and recovery. The vegan sausage gives you the protein necessary to help your muscles build back faster. The cinnamon add a hint of sweetness to this dish where regulars potatoes and rice feel a bit bland. The use of the microwave fits the theme of this dish being "college style" although a bit controversial when it comes to cooking potatoes. When food needs to be done in a timely matter than this is the meal for you.
